Golden Harvest Millet Seekh Kebabs

Rich in fiber and essential nutrients, it’s the kind of ingredient that not only comforts but also fuels your body, making these kebabs more than just a snack—they’re a celebration of mindful eating. As you take a bite, the crispy outer layer gives way to the soft, hearty millet inside, infused with fragrant spices and the crunch of roasted peanuts.

Ingredients:

For the Kebabs:

  1.  Proso Millet: 240 gm
  2.  Red Bell Pepper chopped: 30 gm
  3.  Refined Oil: 1 tbsp
  4.  Salt: To taste
  5.  Roasted Peanuts, coarsely crushed: 1 tbsp
  6.  Green Chili, chopped: 1 tsp
  7.  Ginger, chopped: 1 tsp
  8.  Garlic, chopped: 1 tsp
  9.  Garam Masala Powder: a pinch
  10.  Yellow Chili Powder: a pinch
  11.  Water: As needed
  12.  Satay Sticks: 8 nos

For the Mango Mint Chutney:

  1.  Ripe Mango, peeled and diced: 1 medium-sized
  2.  Fresh Mint Leaves: 10-12
  3.  Cumin Powder: 1/2 tsp
  4.  Green Chili: 1
  5.  Salt: To taste
  6.  Lemon Juice: 1 tsp
  7.  Water: As needed

Method:

For the Mango Mint Chutney

  1.  In a blender, combine diced mango, fresh mint leaves, cumin powder, green chili, salt, lemon juice, and a little water. Blend until smooth and adjust seasoning as needed.

For the Kebabs:

  1. Soak Proso Millet overnight, then strain and boil it in water until fully cooked. Once tender, drain any excess water and set it aside.
  2. Heat 1 tablespoon of oil. Add chopped red bell pepper, green chili, ginger, and garlic, and sauté until soft and aromatic.
  3. Stir in crushed roasted peanuts, a pinch of yellow chili powder, and garam masala powder. Cook for a minute.
  4. Add half of the cooked millet to the skillet and blend the mixture coarsely in a food processor, ensuring it’s slightly chunky for texture.
  5. With the mixture, form small cylinder-shaped kebabs. Gently roll the kebabs in the remaining cooked millet for a crunchy coating. Insert satay sticks into the kebabs.
  6. Roast the kebabs over an open flame or grill, turning them gently until they are golden and slightly charred on the outside.
